Day 113, Heartbreak Breakfast

I’ve been craving pancakes and red velvet cupcakes. Recently my pancakes and red velvet cravings were too much, these two foods haunt me everyday. And today I decide that nothing can stop me from eating these two foods, since I’m not a decent baker I will buy  my red velvet cupcakes from a local bakery and  make my own pancakes.

 

Red Velvet Pancakes

  • 1 cup flour
  • 1 cup buttermilk
  • 1 egg
  • 1 tablespoon cocoa powder
  • 3 tablespoon sugar
  • 3 tablespoon butter, melted
  • 1 tsp vanilla extract
  • 1 tsp white vinegar
  • 1 tbsp plain yoghurt
  • 1 tsp baking powder
  • 1/2 tsp baking soda
Direction:
  • Place flour, sugar, baking powder and baking soda in a large mixing bowl. Mix together and set aside
  • Combine food coloring with cocoa powder and mix until all the cocoa powder dissolved. Mix together buttermilk, egg, white vinegar, melted butter and yoghurt.
  • Pour buttermilk mixture into dry ingredients and whisk together until well combined. Add cocoa powder mixture into a pancake mixture and mix until just combined.
  • Place a griddle  on a medium-low heat and lightly grease with butter or oil. Pour about  1/4 cup batter on to the pan, cook about 3 minutes until bubble start to appear and the flip pancake and lightly brown on the other side.
  • Serve warm with
