Day 50, Hunger is the Best Pickle
Pickled Cucumber
This acar usually eaten as a condiment for satay. fried rice, martabak and any other foods.
Ingredients:
-2 cucumber, cut into wide sticks
-1 tbsp salt
-3 shallots, thinly sliced
-2 1/2 tbsp sugar
- 2 tbsp rice vinegar
- 7 bird eye chiles
- 1 carrot, optional
Method:
- Use only the white part of cucumber and discard the seeds, cut into a wide sticks and set aside.
- If you use carrot, peeled and cut into a dice or wide sticks but smaller than cucumber.
- Put carrot, cucumber and chillies in a big bowl. Stir in sugar, salt and vinegar. Stir to combine and let sit for 15 minutes.
