Day 141,Chicken Parmesan with Potato and Broccoli

I still had some Galbani fresh mozzarella and mascarpone in my fridge. Usually I made pizza or arancini when I have a mozzarella in hands but this time I want make something different.  After browsing I found this Oven-Baked Chicken Parmesan, I have all the ingredients except marinara sauce. Day 122, Home made Caramel Sauce

Why don’t you turn off your television and just listening my story about caramel? I have lived through many ages. Through the eyes of salmon, deer and wolf. I have seen the northmen invading Ireland, destroying all in the search of caramel. Day 50, Hunger is the Best Pickle

Pickled Cucumber

This acar usually eaten as a condiment for satay. fried rice, martabak and any other foods.

Ingredients:
-2 cucumber, cut into wide sticks
-1 tbsp salt
-3 shallots, thinly sliced
-2 1/2 tbsp sugar
- 2 tbsp rice vinegar
- 7 bird eye chiles
- 1 carrot, optional

Method:
- Use only the white part of cucumber and discard the seeds, cut into a wide sticks and set aside.
- If you use carrot, peeled and cut into a dice or wide sticks but smaller than cucumber.
- Put carrot, cucumber and chillies in a big bowl. Stir in sugar, salt and vinegar. Stir to combine and let sit for 15 minutes.
